Peach Crumb Bars are the EASY version of peach pie, except even more delicious! A buttery crust makes them memorable. They are the perfect finger food for your next party. The entire pan of tantalizing fruit will be eaten up quickly.

‘Tis the season for swimming, popsicles, tank tops, air conditioning and PEACHES! When we arrived at my dad’s house a few weeks ago, there sat a huge box of ripe, delicious peaches on the kitchen counter. I secretly hoped my stepmom didn’t have plans for them and my recipe-making wheels started turning. She graciously allowed me to be creative with the juicy fruits!

My favorite peach recipe to date is still my peach and blueberry cheesecake, but these peach crumble bars are a close second. (Also in the running: my totally yummy Peach Blueberry Crisp.)

These bars are just as good as (if not better than) peach pie but so much easier to make.

HOW TO MAKE PEACH BARS

This is an easy peach recipe that is so delicious using fresh peaches!

  • Preheat oven to 350 degrees F. Line a 9×13 pan with parchment and set aside.

PREPARE THE CRUST

  • In a large bowl, combine the egg, butter and sugar. Mix until creamy. Add flour and salt and stir until combined. Using your fingers (flour them, if needed) then press the dough evenly into the bottom of the prepared baking pan. Bake in the preheated oven for 15 minutes.

PREPARE THE FILLING

  • In a large bowl, combine peaches, butter and brown sugar. Stir until combined. Pour the peach mixture evenly over the crust.

PREPARE THE TOPPING

  • In a small bowl, combine the brown sugar, flour and butter. Stir or use a pastry cutter or food processor, until mixture is crumbly. Spread crumb topping evenly over peach layer. Bake for an additional 30 minutes, or until the top is light golden brown.

  • Let cool completely and cut into squares.

RECIPE TIPS

  • For a little extra depth to your filling, add a teaspoon of vanilla extract or almond extract.

  • A teaspoon of either lemon juice or lemon zest would add a punch to the peach filling!

TOPPINGS FOR PEACH BARS

  • Top a slice with a scoop of vanilla ice cream!

  • You can sprinkle a little bit of powdered sugar over the crust and topping.

WHAT IS THE DIFFERENCE BETWEEN PEACH COBBLERS, CRUMBLES AND CRISPS?

All are very similar desserts and all involve fruit with some sort of topping.     So yummy and so beautiful looking! I forgot to add the vanilla and lemon juice this time, I will try that next time. I will also use 1/4 cup brown sugar in the filling, next time and 1/2 cup brown sugar in the topping as this recipe was just slightly too sweet for me. Besides that, a serious home run!!

      That would work in a pinch. The texture is a bit different but would still be tasty. Make sure you drain the juice as much as possible.
