Fall and winter are cozy times of the year when we seem to crave warmth and heartiness during our meal times. Which can be more difficult to provide on the typical weekday breakfast. I like finding little breakfast ideas that can be made up quickly and are in fact, comforting and delicious.

This Cherry Oatmeal Bake is a whole food recipe that is light on sugar and big on taste. It is warm and satisfying on a cold morning. Making it a great option for an easy, satisfying breakfast.

Yet even on days when I still have the time, popping this breakfast bake into the oven is something I do often. Leaving me time to work in the garden before the heat comes or catch up on the laundry all the while breakfast is baking away.

Why I Love This Recipe

As much as I love to cook and bake. We are doing three meals a day for 7 days a week, which is a ton of cooking and baking. I love the fact that a recipe like this allows me to throw it together and pop it into the oven. Proving a healthy delicious meal with minimum effort. In this recipe, I have chosen to feature pitted cherries. However, any berry that you love will do.

In fact, you can opt to not even have the berries in this recipe. I have even used other fruits with great success. Things like bananas, apples, and even peaches work wonderfully.

What You Will Need To Make It

½ cup coconut oil

2 cups of old-fashioned oats

1/2 cup packed brown sugar or (1/2 cup maple syrup works great too)

1 egg

a pinch of salt

1 tsp vanilla

3 cups of milk

2 cups of pitted whole cherries (frozen or fresh)

Directions

In a medium bowl mix the milk, egg, brown sugar, salt, and vanilla.

Allow the milk mixture to come to room temp before adding the coconut oil. Otherwise, it will clump up. If this happens, it’s ok as it will melt again once baked.

Lastly, mix in the oats and pour into a baking dish. Cover with plastic and place in the fridge overnight.

When ready to bake, pour in the cherries and mix them around so that they are evenly distributed.

Bake at 350°F for approximately 45-50 minutes or until the top is golden.

FAQ

What other berries can be used?

Any! I have used blackberries, strawberries, and blueberries for this recipe. I would also use raspberry or a mixed berry as well. As I mentioned above, you can use any fruit you love for this recipe. Keeping the idea of the oats, coconut oil, brown sugar, and milk as your base. Other fruits I have tried, are apples, bananas, and peaches. All have created a delicious oatmeal bake.

Do I have to soak the oats overnight or can I make this the same morning?

You can make this the same morning you are serving it. It is a very versatile recipe. I have done it many times without any taste differences. I would just mix it all up while the oven heats and bake it like normal. They won’t be soaked oats but in a pinch, it works fine.

What can I use in place of the brown sugar?

I find maple syrup to work well in place of brown sugar for this. It still provides that rich sweetness that works so well in oatmeal.

Serving Suggestions

  • Serve with a bit of cream or butter or both for a really delicious boost to this oatmeal cherry bake.
  • Toast is always a great option to place on the table if you want to serve something a bit more on your breakfast table.

Ingredients
