I love taco bell Mexican pizza, so in the spirit of continuing my tradition of attempting to duplicate my restaurant favorites, I had to come up with my own Mexican pizza recipe.

I love this recipe, it is a flavorful combination of seasoned ground beef, enchilada sauce, flour tortillas, refried beans, and Roma tomatoes. A simple recipe to make at home for a Copycat Taco Bell Mexican pizza at home.

I decided to make this Mexican pizza recipe in my Power Air Fryer Oven. And it turned out amazing. I have recreated a few of my favorites using my air fryer or instant pot.

Yes, this Mexican pizza recipe does, the first tortilla is topped with refried beans and seasoned meat, I like to use my homemade taco seasoning.

If you are vegetarian you could definitely leave the meat off without taking away from the awesomeness of this great recipe.

A Mexican pizza from Taco Bell is right around $3.50. But for that amount you can make a few if you use this Mexcian pizza recipe. At least 4 and will have some ingredients leftover.

This Mexican pizza recipe can easily be made using the stove also. With both methods, you will brown your meat over medium-high heat.

And with the tortillas, you can preheat your oven, put them on a baking sheet and make them crunchy in there.

The one thing I did notice with crisping them in the air fryer is that as they “dry” out they tend to get lighter and fly around a little bit.

To prevent this if you have the air fryer oven you can put a second airflow rack on the slots above it when making this Mexican pizza recipe.

My kitchen gadgets have been a life changer, for me as a single mom, the instant pot saves dinner more times than not because it is so quick and easy.

Did you know, that you can cook from frozen in both the instant pot and air fryer? I also often use my air fryer to reheat things that may get “soggy” in the fridge.

How To Make Mexican Pizza In The Air Fryer

Prep Time: 10 minutes

Cook Time: 12 minutes

Total Time: 22 minutes

This Taco Bell Mexican pizza recipe is a great recipe to make in an air fryer or traditionally. My recipe was inspired by the taco bell Mexican pizza.

Ingredients

  • 1 pound ground beef
  • 1 serving homemade taco seasoning (click for the recipe)
  • 1 10-ounce can of red enchilada sauce
  • 8 flour tortillas
  • 1 16-ounce can of refried beans, warmed
  • 2 Roma tomatoes, diced
  • ½ cup mozzarella cheese
  • ½ cup cheddar cheese
  • ½ cup Mexican blend
  • ⅔ cup water

Optional Toppings

  • sour cream
  • cilantro
  • taco sauce
  • salsa

Instructions

  1. Mix cheeses and set aside
  2. Preheat your oven to 400 degrees F Or
  3. Preheat your air fryer to 370 degrees F

  6. Reduce to a simmer and allow to thicken
  7. Remove from heat and set aside
  8. For the tortilla shells
  9. cook in the oven for 5 minutesOr
